Summer Salad with Florette

Florette Salad IdeaSomething I've been finding (quietly) hilarious all week long is how I consider myself to be an advocate for healthy living and yet can't remember the last time I actively put together a salad.  Long, sweaty workouts?  No problem.  A cocktail of vitamins?  No problem.  Making sure not to open my purse at every chocolate shop I pass?  Not too much of a problem.  However cheerfully placing a bag of salad in my shopping basket somehow has managed to find it's way onto the 'problem' list.  Though thankfully, my anti-salad days have been brought to an abrupt end and it's all thanks to Florette!  I was approached by the happy home of salads to create a recipe using their products - fast forward to the present and I'm proud to say I can now be found tucking into a bowl of salad as I watch back-to-back ancient episodes of A Place in the Sun: Home or Away..

Florette Salad IdeaAlthough I'm sure this recipe is floating around in one million other destinations across the internet, I hereby declare this my creation. Joking aside though, I'm quite pleased with the outcome with regard to both appearance and taste.  I was going for a fresh, colourful salad that remained true to my favourite ingredients.  I'm a huge fan of potato salad and so it seemed appropriate to make that the main focus because after all, if a meal doesn't entice you, you're unlikely to take the time to prepare it again!

Florette Salad IdeaSince being contacted about putting together a recipe using Florette's products, I've had summer salads on the mind.  Not only that, I've also opened my mind to how much fun you can have in the process of putting together an attractive meal (because whether I like it or not, healthy meals will always be better looking than the unhealthy alternatives).  I set aside some time to leaf through A Salad For All Seasons c/o by Harry Eastwood that was kindly sent my way and I was so impressed by how unusual some of the recipes were.  Oh and on an entirely different note, I can't recommend snacking on frozen sweetcorn enough - yum!

Florette Salad IdeaA few super-close-ups of the ingredients later and I'm feeling justified in my newfound love for salad.  Never did I think I'd have a 'thing' for the sound of a green leaf crunching between my teeth and yet here we are.  Perhaps now when scrolling down my Instagram feed, I'll take note of the tasty salad creations instead of rolling my eyes and moving past them.  Can I get a 'Three Cheers for Salad?'

    Oddly enough, I can't seem to get myself to eat salads, too, even though I'm predominantly vegetarian, haha. This one looks incredibly good, though! I thought that it was mashed eggs in the center at first, but potatoes! Yes, please! (Eggs and potatoes are some of my favourite food ever.) This looks so good, Gabrielle, ahh!

  44. Love your salad with potato salad:) In fact I sometimes find green salads too light and not filling, but I'm sure that the scoop of potato salad fix this issue (though I wouldn't mind adding a Danish grilled sausage on top of that):)
