Although I'm sure this recipe is floating around in one million other destinations across the internet, I hereby declare this my creation. Joking aside though, I'm quite pleased with the outcome with regard to both appearance and taste. I was going for a fresh, colourful salad that remained true to my favourite ingredients. I'm a huge fan of potato salad and so it seemed appropriate to make that the main focus because after all, if a meal doesn't entice you, you're unlikely to take the time to prepare it again!

Since being contacted about putting together a recipe using Florette's products, I've had summer salads on the mind. Not only that, I've also opened my mind to how much fun you can have in the process of putting together an attractive meal (because whether I like it or not, healthy meals will always be better looking than the unhealthy alternatives). I set aside some time to leaf through A Salad For All Seasons c/o by Harry Eastwood that was kindly sent my way and I was so impressed by how unusual some of the recipes were. Oh and on an entirely different note, I can't recommend snacking on frozen sweetcorn enough - yum!
A few super-close-ups of the ingredients later and I'm feeling justified in my newfound love for salad. Never did I think I'd have a 'thing' for the sound of a green leaf crunching between my teeth and yet here we are. Perhaps now when scrolling down my Instagram feed, I'll take note of the tasty salad creations instead of rolling my eyes and moving past them. Can I get a 'Three Cheers for Salad?'
