Christmas Cake

Simple Christmas Cake Recipe Blog
Ordinarily the only time I think about Christmas Cake is when I'm wondering why a fruity mass was established as the 'traditional' festive recipe and not salted caramel chocolate cake.  However, this year I'm feeling uncharacteristically cordial about the cake and have even gone as far as to bake one!  Taking into consideration how popular the recipe is, I was determined to whip one up myself this year for gleeful guests, however also considering there's no love lost between myself and the fruity creation, I quickly looked in the direction of Waitrose's Christmas line for their fabulously helpful Christmas Cake Kit packed full with ingredients!  Cheating?  Maybe.  Though at least this way guests won't have to taste my tears of frustration in the mix...

The cake kit includes dark brown soft sugar, plain flour, mixed spice fruit mix with brandy, chopped almonds, marzipan apricot jam and ready to roll icing.  The ingredients needed outside of the kit include butter, eggs, orange and decorative extras if desired.  Quite incredibly, there were no bumps along the way and minus the quick search online to check whether you can get drunk on the scent of brandy-infused mixed spice fruit alone, it was a simple case of following the step-by-step guide provided!


Preparation:  15-20 minutes (my advice would be to allow 30-40)

Cooking:  2.5 - 3 hours

Serves:  approximately 24 slices

last minute christmas cakeAfter wrapping it in two layers of greaseproof paper and one layer of tin foil, I've tucked it safely way in a festive tin ready for next month.  I have to admit, I'm a total Christmas Cake convert - I'm even looking forward to 'feeding' it with brandy over the next few weeks!  Of course whether I'll enjoy the recipe as much as others is another matter... though I'll keep you posted once the time comes.  Anticipate images of this sweet treat again across my social media once it's wrapped in icing and decorated!  Right, any volunteers to help me with the washing up?!

    2. I am like stephanie here and Shireen there. I am not a fruit cake fan but my hubby LOVES these cakes! It does look super yummy and you are making me really hungry at this hour now... it's raining outside! Darn *_^

      We get our good dose of fruit cake whenever my hubby's aunties come over for a visit from Australia. They love baking and making fruit cakes and you know, they tend to be able to keep for a very long time, so that's my hubby's stock of good old home made fruit cakes! Right in our fridge, haha *_^

  8. Usually I'm not the biggest fan of cakes but even I have to admit that around Christmas time it feels wrong to not have a christmas fruit cake/pudding on the table. My grandma makes about 20 fruit cakes every year at Christmas and always sends them home with each of the us, so luckily I never have to go to the trouble of making one myself!

I used to HATE Christmas fruit cake but in the last few years been a total convert. Even devouring my mums every year. Not sure if I'd want to tackle it myself though.

  14. I'm not a fan of Christmas cake myself and am totally with you when you wonder why it's not a salted caramel chocolate cake! (Just writing that makes me want to drool!) However I love kits like that one which make baking so easy and product such a great result!

    A Christmas cake for me is complete when it's alight with brandy, and once the fire burns out you have a beautiful tasty warm cake with brandy notes meshed in with the flavours of the cake.
