The cake kit includes dark brown soft sugar, plain flour, mixed spice fruit mix with brandy, chopped almonds, marzipan apricot jam and ready to roll icing. The ingredients needed outside of the kit include butter, eggs, orange and decorative extras if desired. Quite incredibly, there were no bumps along the way and minus the quick search online to check whether you can get drunk on the scent of brandy-infused mixed spice fruit alone, it was a simple case of following the step-by-step guide provided!
Preparation: 15-20 minutes (my advice would be to allow 30-40)
Cooking: 2.5 - 3 hours
Serves: approximately 24 slices
After wrapping it in two layers of greaseproof paper and one layer of tin foil, I've tucked it safely way in a festive tin ready for next month. I have to admit, I'm a total Christmas Cake convert - I'm even looking forward to 'feeding' it with brandy over the next few weeks!
