- 140g butter , softened, plus extra for the tin
- 140g caster sugar
- 2 large egg, beaten
- 140g self-raising flour
- 1 tsp baking powder
- 2 very ripe banana , mashed
- 50g icing sugar
For the finishing touch, I kept things simple by drizzling icing over the loaf. Though, if that doesn't get your stomach rumbling, try dried banana slices, melted chocolate, nuts or perhaps even assorted chocolate chips. Speaking of which, I may well give chocolate and banana cake a go soon. Mmm...
With love,
Gabrielle x
This looks so so delicious! I love banana loaf so much, you can't beat it! Gorgeous photos :) xo

This looks incredible! I love banana bread. The dense, yet soft and sweet flavor just can't be beat! I love adding walnuts to mine. But chocolate sounds like a great idea. Thanks for sharing!

All of those toppings you suggested sound delicious, though the classic icing really appeals to me as well. Banana cake/bread or a loaf is one of my favourite things, and funnily enough I do have some overripe bananas laying around...

This actually looks amazing. I'm envisioning a huge slice for breakfast tomorrow, though I'm also imagining there's no actual banana in it. I hate bananas! (And I feel like I'm the only one in the world with this dislike most days loool!)

This looks so good! Haha I'm the same with the overripe bananas and can't stomach them the texture and smell but using them in this kind of cake sounds really appealing. I could just reach into the screen and take a slice LOL. Gemma x

All my friends are always telling me to try baking a banana loaf and honestly I have no idea why I keep forgetting to do it for I really like bananas in every shape and form.
ReplyDeleteI must admit that your loaf looks fantastic...and delicious!!! hence inspiring a desire to finally give it a go. I love how you kept it simple...sometimes that is the best way to go. Banana is supposedly one of healties fruits and it has that 'happiness factor', like chocolate it has an ingrediant that tells our brain to be happy...so that's an additional reason.

The banana loaf looks just perfect! When I was a kid, my mom used to bake banana loaves with chocolate chips. So delicious, and still one of my childhood's favorite treats:)
ReplyDeleteThis looks soooo yummy! I've never actually made banana loaf before but I definitely need to give it a try! :) xx

All the amazing! <3
